- 1. A deceased mouse was observed in a trap in one of the back rooms that had a chest freezer.Ensure facility is monitored closely for other pest issues. Keep a pest control report and if this issue increases, operators may need to hire a licensed pest control company to assistance.2. PHIs observed a gap around the back delivery door. Ensure the gap is repaired as this may allow pest entry.

- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- 1. Hot held food items were not being held at 60C or hotter (PHI measured products internally with a sanitized probe thermometer and measured at 43C). Asked operator to discard food items (pizza, breaded meat). Ensure food is cooked to their proper internal temperatures (74C) and then hot held at 60C or hotter. 2. Sandwich holding cooler was a bit elevated at the time of inspection ~8C. Discussed having this cooler adjusted to bring the temperature down to hold food at 4C or less. If cooler cannot hold food at 4C or less, move all hazardous food items to a functioning cooler.
