      • A large accumulation of frost was observed inside the ice cream freezer. The excessive frost buildup may contribute to contamination of food products and prevents the unit from being maintained in a clean and sanitary condition. The freezer must be defrosted regularly to prevent excessive frost accumulation and to ensure proper sanitation and operation. The supervisor advised that a request has been submitted to the franchise owner for replacement of the freezer.

      • Frozen beaverdog sausages and a package of minced uncooked bacon were observed thawing at room temperature.- Staff was directed to move the food items into a cooler for correction. Frozen foods must be thawed using approved methods such as in a fridge or under cold running potable water, or by another sanitary method that prevents temperature abuse.
