- Low temp chemical dishwasher did not dispense correct amount of sanitizer into the cycle. The operator must get a technician to troubleshoot and repair dishwasher to ensure correct amount of sanitizer is being dispensed.In the meantime, the operator must use an alternative method of sanitizing. As discussed, please use the submersion method. Fill sink with sanitizer solution and submerge equipment and utensils for at least 30 seconds then air dry.Follow up required.

- The dishwashing sanitizer concentration was found to be below 50 ppm. The chef stated that they have already contacted the service provider, who is scheduled to visit on December 26, 2025. In the meantime, the chef was instructed to wash and rinse dishes using the dishwasher and prepare a sanitizer solution in the sink for sanitizing.
