- 19(1)(a) A food establishment must be located, designed, constructed and maintained to ensure all of the following:
(a) that the risk of contaminating the food is minimized;
- In accordance with Section 2.7(c) and Section 2.7(d) of the NS Food Retail and Food Services Code, you must ensure all lighting fixtures are shielded with shatter-proof coverings in areas where there is exposed food, equipment, utensils or linens. Light shields are starting to crack above food processing area.
- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- Food grade bleach sanitizer must be mixed to 100ppm for food contact surfaces. Bleach sanitizer was at 500ppm at time of inspection. Bleach food grade sanitizer mixture: 1/2 teaspoon of regular house hold bleach per 1 litre of water. (mix daily)

- 29(3) A food establishment must provide facilities and equipment to implement the maintenance, cleaning and sanitation program and must identify in their program the cleaning and sanitizing agents used in the food establishment, including their concentration and uses.
- Bleach sanitizer in spray bottle measured too strong. It was diluted at the time of inspection to yield 100 ppm chlorine sanitizer. To prepare a food contact sanitizer measuring 100 ppm chlorine, mix 1/2 tsp unscented concentrated household bleach per litre of water.
