Shatterproof covers prevent broken glass from contaminating food and are crucial especially where heat and accidental impact is likely to occur (ovens, stoves, dishwashing area.) Corrective Action a) Wiping cloths should be stored in a sanitizing solution between uses. Ensure the sanitizing solution is at the correct concentration. b) Repair broken shatterproof cover.

- Observation(s): Observed incomplete logs which did not cover the full range of cooling. Could not verify if cooling process was acceptable. Operator had indicated that he uses an icebath and shallow containers. Please have these logs completed by Oct 23 and emailed to EHO. Repeat Infraction from previous inspection - Cooling procedures were reviewed with staff. Cooling temperatures were not being monitored or recorded. It was discussed with staff that temperatures must be monitored to ensure potentially hazardous foods are being cooled properly. Also cooling temperatures should be recorded on a temperature log sheet.

Operator was aware of the requirements when separately asked -- informed operator to ensure all of his staff are following appropriate food hygiene procedures.

NSF-certified thermometers are recommended. Temperatures should be recorded on log sheet. 2. Chlorine test strips were not available at the time of inspection. Test strips must be available to verify the sanitizer concentration.

Staff was requested to make up a bucket of bleach for the wiping cloths. CDI - Corrected During Inspection. Wiping cloths in continuous use must be kept in a bucket of sanitizer at adequate concentration (i.e. 200ppm of chlorine). Concentration must be verified using test strips. 2. Observed water pooling n the basement. According to staff, the hot water tank has been leaking. It is unsure when this would be fixed. This issue must be addressed as soon as possible as the leak appears to be quite extensive and dry foods/products are kept in the basement. At the time of inspection, all items were kept on shelves and off the ground.

- Observation(s): 1. Observed a large quantity of shelled eggs stored at room temperature. Discussed with operator that potentially hazardous foods including shelled eggs must not be stored in the danger zone (between 4C and 60C) for more than 2 hours (total). The danger zone is where bacteria can grow and multiple to an amount that can cause illness when consumed. Discussed that only small amount of eggs should be stored at room temperature during the rush hours and all eggs must be used within the 2 hours time frame. Otherwise they should be kept at 4C or colder. Note: - According to the temperature log sheets, there appears to be no corrective actions for when the coolers' temperatures are recorded at >4C. Any corrective actions should be documented. Potentially hazardous foods must be stored at 4C or cooler to prevent bacterial growth.

Wiping cloths in continuous use were not stored in a bucket of sanitizer solution. Please ensure cloths in continuous use are stored in a bucket of sanitizer solution e.g. chlorine at 200ppm or Quats (Quaternary Ammonium) at 200ppm. Note: - Test strips should be used to verify the concentration.

The atmosphere is amazing in here! Definitely some of the best French toast I’ve ever had, very reminiscent of the stuff I used to eat as a kid!! Definitely a must return whenever I’m back in town.

Most of the food was amazing. I loved the Fluffy and thick French toast. The pancakes were also delicious. I ordered a medium rare steak and got a very well done steak, if the steak was medium rare, this would've been a 5 star experience. The service was good and the owner was very accommodating. I would definitely recommend eating here if you want great food.

Love these types of diners. Great atmosphere and fantastic bacon!! I was happy to see they divided some dishes on the breakfast menu into different portion sizes. I wanted to try the French toast and was able to order “the baby” option which was one slice of French toast, one egg, and bacon or sausage. Perfect amount of food for me and was fantastic!!

Found it by accident... happy little accident.. best club sandwich I've ever had.. (a full 6 slices of bacon) Anna the from scratch tomatoe basil soup was too die for.. add fresh made instore cut fries to the mix, and this plane is a must for anyone in Revelstoke!

This place opens early, and serves REALLY generous portions! We ordered the “Papa Bear” (3 pieces of French toast topped with fresh whipped cream and seasonal berries) and the Lumberjack Slam, and we were shocked by the size of the portions. The food is unpretentious, hearty and tasty, and perfect for when you are headed out for a long day of activities. Service is friendly and homey. Would recommend especially if you are hungry.

Don’t leave Revelstoke before trying this place breakfast. A lots of cool stuff on the wall, make a great place to eat. We ordered Mama bear and veto burrito. Portions were more than enough very delicious food.

This is the breakfast my husband and I have been looking for. I had the Big Bend Hot Cereal with a Fruit Cup. It was hot fresh oatmeal with raisins, pumpkin seeds and coconut. The fruit cup had fresh blueberries and sliced strawberries. My husband had the Basic with ham, sausage and bacon. All the meats appear to be locally sourced and cooked to perfection. The toast was locally sourced from bakery. The potatoes were hand cut cubes with onion. Very good. The decor is antique, old photos of mining, climbing and railway. The music is country folk. I highly recommend this location if you are in revelstoke and looking for breakfast. Well done Big Bend.

Loved this place! Stopped here on our way out of revy and it didn’t disappoint. The atmosphere is cool with antique decor. The food was delicious and you get a lot with each meal. The service was great! Would definitely come back here, thank you!! :)
