- Observation(s): - bar glasswasher had no chlorine test paper Please get test paper, and be sure to add glasswasher maintenance (i.e., clean, verify chemical bottles are full, and TEST AND RECORD chlorine residual) to daily start-up tasks. - kitchen dishwasher had chlorine test paper BUT need to TEST AND RECORD chlorine residual daily - food contact surface sanitizer (i.e., QUATS) dispensed through auto dispenser, BUT need to TEST AND RECORD QUATS sanitizer daily

- Observation(s): There was a lack of understanding around proper food contact surface sanitizers and test papers. They were using QUATS but had chlorine test paper. When we first tested the QUATS there was 0ppm in spray bottles, but after adjusting dispenser we were able to get 200ppm. Please obtain proper test paper, test and record daily, and ensure that all kitchen staff understand to always clean first and then sanitize (concentration and time are essential). Thank you!
