      • Dirty wiping cloths noted on kitchen counters.- Immerse wiping cloths in the sanitizer solutions after each use.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Gravy in the hot holding unit was measured at 47C, needs to be held at >60C.- Temperature setting on the unit was set at "Low". The operator adjusted the temperature setting, gravy was reheated to >74C then hot held at >60C.

      • Caulking along the dishwash counter is dirty/moldy.- Thoroughly clean the area or replace the caulking.
