      • The duct tape around the shelving trim was removed, the area was marked with a sharpie marker as "no more duct tape".Ensure to find a permanent fix to the issue (cover the area with paint that enhance cleanable surface).

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Quats sanitizer solution was tested at 50ppm. Sanitizer solution was replaced and tested at 200ppm.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The shelving trim above the mixer was observed to be in disrepair, repaired with duct tape. Duct tape is not cleanable and not food grade. Please remove the duct tape and repair the edge.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1. The dough mixer was observed to be in disrepair by its attachment hub, the area was wrapped with duct tape (fraying and soiled). Please replace the attachment hub or cap it properly. 2. Mineral scale and grease build up was observed inside the dishwasher. Please refer to the dishwasher manual for descaling and maintain the machine in a clean condition.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Grease build-up was observed on floor edges close to the mixer. Please clean hard to reach areas.
