    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Clean and sanitize the three floor drains in the kitchen noted as a potential food source on pest control reports, that have an odor and visible build up.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Observed food debris, dust and grease in containers storing pizza pans, underneath preparation line by pasta station, underneath the pizza over, underneath the deep fryer and the fan behind the bar. Thoroughly clean and sanitize the kitchen.
    • 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (b) insects, rodents and other pests are controlled;
      • Clean and disinfect area behind the bar affected by rodent droppings.
