- Observation(s): NEW INFRACTION: All food coolers and freezers must have a visible thermometer available for monitoring temperatures. All cooler and freezer temperatures must be checked daily, and the temperatures recorded, to ensure proper operation. Coolers must be 4° c or colder, freezers must be -18° C or colder. A log sheet is provided with this report.

- F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
- Observation(s): • NEW: The sandwich/dairy/meat display cooler was not operating at the required temperatures for storing and displaying potentially hazardous foods. Do not turn of the power to this cooler when foods are in the cooler. This cooler must be able to maintain all potentially hazardous foods at a food temperature of 4° C (40° F) or colder at all times. Have this cooler repaired or replaced. • NOTE: Staff were instructed to remove all potentially hazardous foods (i.e. sandwiches, deli-meats, dairy items) from this cooler, and not to replace them in the cooler until the cooler is repaired or replaced. Keep the foods in other properly operating coolers. • NOTE: Staff must check cooler and food temperatures daily to ensure that the required temperature of 4° C (40° F) or colder is being maintained.
