Main kitchen: A ceiling tile was missing in the dry storage room.-Please replace the ceiling tile.3. 4th floor serving kitchen: The hand wash sink inside the kitchen was slow draining and had only cold water.-Please service the drain and adjust the water temperature to promote thorough hand washing.

      • 1. The countertop refrigerators on the 2nd and 4th floor were at 14 and 15 degrees Celsius.2. The refrigerator in the main kitchen beside the ice machine was at 12 degrees Celsius.-Asked staff to move perishable foods to alternate refrigerators at the time. Please repair the refrigerators so they maintain 4 degrees Celsius or less.

The sanitizer solution in pails in the serving kitchens and cafeteria was measured at 100 ppm quats.-Please change the sanitizer solution more frequently to ensure it maintains 200ppm quats. Recommend changing at least every 2 hours.

Arborite was lifting on the counter around the 2 comp sink in the 3rd floor serving kitchen and there was mildew on the wall behind the sink.Note; plans are in place to renovate the serving kitchen.

      • There was some food debris in the following areas:-In the corners and along the dishwasher in the 1st floor serving kitchen.-In the cupboards under the 2 compartment sinks in the 2nd and 3rd floor serving kitchens.-On the counter behind the coffee machines in the 3rd floor serving kitchen.-On tables and chairs in the dining rooms.-Please clean the noted areas.
