- F2.1 Does the facility have proper monitoring supplies?
- Observation(s): F2.1: Sanitizer test strips not located in kitchen. Corrective Action: Ensure test strips are available in the kitchen at all times in order to ensure the bleach sanitizer is at the required 200ppm concentration.
- F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
- F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
- Observation(s): F2.3D: Bleach sanitizer was not available in the kitchen at the time of inspection. Corrective Action: Ensure bleach sanitizer is available in the kitchen at all times. Ensure that their is a sanitizer solution is mixed whenever food preparation or cooking is occurring, in order to properly clean food contact surfaces.
- F2.3D Sanitizer solution must be available and kept at the correct levels for adequate sanitizing action.
- F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
- Observation(s): F2.5J: Lights located in the kitchen were not shatterproof and did not have shatterproof covers on them. Corrective Action: Acquire shatter proof light bulbs or install shatterproof light covers. If bulbs and covers cannot be found to fit the size of lights currently installed, then replace the entire light fixtures and install new ones.
- F2.5J Artificial lighting must have shatterproof covers or shatterproof bulbs.
- F2.7 Are there handwashing stations available and properly supplied?
- Observation(s): F2.7: Handwashing sink had an unknown product that was not meant for handwashing. Corrective Action: Acquire liquid hand soap that has a hand soap claim on the bottle. Do not re-use bottles unless they are the same product.
- F2.7B Handwashing station must be supplied with liquid soap in a dispenser.
