      • Quat sanitizer in bucket was from the previous day and was greasy. It must be changed often and daily. Operator had did not locate test strips for the quat sanitizer.

      • Cleaning needed more attention. For example: garbage can lid splatters, gravy warmer old splatters, old floor grime under prep table and in the aisle, dirty around microwave and front prep area. Old cardboard in the bottom of the kitchen standing cooler should be removed (not cleanable).

      • Raw chicken bins were on a shelf above tomatoes and lettuce. Corrected immediately.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Front display cooler for sauces/ pasta was warm. Contents voluntarily discarded. Cooling unit had ice build-up. Cooler was emptied to defrost. Ensure sandwich topping cooler also remains cold and is defrosted.
