- Observation(s): The display sandwich cooler measured ~12°C, which coincided with their internal thermometer, at the time of the inspection. Potentially hazardous foods (PHFs) must be maintained at ≤4°C at all times. Transfer all PHFs to a working refrigeration unit and repair/replace the sandwich cooler so it functions as intended at ≤4°C.
