- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- The sanitizer solution in a bucket was measured at 0 ppm chlorine. The operator indicated that the staff may have mixed soap with chlorine. It was explained to the operator that this is not an appropriate method as the cleaner can react with chlorine to produce chlorine gas which is toxic. The solution was promptly discarded by the operator. Instruction on how to mix appropriate chlorine sanitizer solution is provided to the operator with this report.

- The dishwasher was dispensing chlorine at a concentration around 10 ppm. The operator indicated that they would contact a service technician. In the meantime, the operator was asked to sanitize the dishes manually. The manual dishwashing poster is provided to the operator with this report.
