      • Used wet cleaning cloth is on the prep counter. The operator was advised to place the cloth in a sanitizer bucket, and it is done

      • There are scoops in the floor and sugar container. The operator is advised to remove the scoops to mitigate cross-contamination, and this is done.

      • The ventilation hood is past its scheduled cleaning date. Maintains the hood system in a clean and grease-free condition to ensure safety and efficiency.

      • The food handling permit was not displayed. The operator promptly printed and displayed the permit.

      • Grime buildup was observed on the floor around equipment and corners in the back. Please ensure to clean these easy to miss spots.

      • Bleach sanitizer was measured at 50ppm. Operator made a new solution, and it was measured at 100ppm.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Ham stored in the cold holding was measured at 6.7 C . Operator removed half of the portion and used lid to maintain the temp.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Water was not draining properly in the handwashing sink.
    • 17. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Critical)?
      • Dirty aprons were stored on the rack where utensils were stored. Clean aprons were found stored among the utensils.Operator promptly moved dirty and clean aprons to a separate place and put the utensils in a dishwasher where washed aprons were stored.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The light cover was not properly secured from one end. Operator immediately fixed it.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Freezer was not maintained in a clean condition. There was accumulation of ice particles and some food debris.
