      • There were flies and a wasp noted in the kitchen.A PCO comes out to the facility regularly.There are light traps installed. Discussed setting up fly sticky traps in non-food areas.

      • Quats sanitizer in spray bottle underneath the front counter measured 0 ppm. Staff discarded solution. Discussed changing sanitizer in the spray bottle on a more frequent basis.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Gravy sitting on the counter measured 33C. Staff mentioned that food product was nearing being left out for 2 hours. Staff discarded product. Discussed keeping foods hot at >60C or storing in the refrigerator.
