- 29(1) An operator of a food establishment must have a maintenance, cleaning and sanitation program in place to control the risk of contamination of food, equipment, utensils and other facilities in the food establishment.
- Discussed manual dish washing and sanitizing procedure with food handlers. Food handlers were unable to demonstrate proper manual dish washing and sanitizing procedure - missing the sanitize step.
- 29(3) A food establishment must provide facilities and equipment to implement the maintenance, cleaning and sanitation program and must identify in their program the cleaning and sanitizing agents used in the food establishment, including their concentration and uses.
- Bleach sanitizer measured too strong - diluted to 100ppm at time of inspection. For a food grade surface sanitizer mix 1/2 teaspoon of unscented household bleach per 1 litre of water.
- 33(1) An operator must ensure that the temperature of food is controlled so that the food does not deteriorate or become inedible or unsafe.
- Packaged lasagna (8) in the retail display cooler measured an internal temperature of 19.0 degrees Celsius at 16:13hrs. Ambient air temperature of the retail display cooler measured below 4 degrees Celsius. Lasagna was removed from the oven between 11:30-12:00hrs and allowed to cool at room temperature of 2 hours and then covered and moved to the retail display cooler. Potentially hazardous food must be cooled from 60 degrees Celsius to 20 degrees Celsius in 2 hours or less and from 20 degrees Celsius to 4 degrees Celsius in 4 hours or less. Packaged lasagna was removed from the retail display cooler at time of inspection.
- 35(1) If directed by an inspector, a food establishment must have a quality assurance system in place that identifies, implements, monitors and verifies critical factors in the processing and preparation of food and that effectively prevents contamination or adulteration of food and ensures food safety.
- Refrigeration/freezer temperature logs must be completed at least once daily and maintained onsite for review by the Public Health Officer.
- 9(a) An operator must renew a permit, other than a temporary permit, on or before the expiry date by submitting a completed renewal application to the Minister on a form approved by the Administrator together with all of the following:
(a) the applicable fee prescribed in Section 5;
- Food establishment permit expired May 30, 2024. Renew permit within the next 5 business days.
