      • One of the preparation refrigerators near the main cooking line was noted at 14 degrees Celsius. This refrigerator contained a sauce as well as diced onion. These food items were discarded. Service and monitor this refrigerator to ensure that it maintains a temperature at or below 4 Celsius before retuning the refrigerator to use.
    • 34 An operator must ensure that a food establishment is operated so that all food and food ingredients are processed, manufactured, handled, prepared, packaged, served, sold, offered for sale or distribution free of charge, dispensed, displayed and stored in a manner that prevents contamination and adulteration.
      • Do not store raw meat above ready to eat food items inside the refrigerator or freezer.
