- Observed a staff member slice meat off the cone and then transfer directly to the hot holding unit. The hot holding unit temperature was measured at less than 74C. Corrected- Sliced Donair meat must be placed onto the grill after slicing or transferred to a hot holding unit/steamer that can maintain a temperature of 74C or hotter.

- Fully cooked intact end portions of the Donair cones were noted in the cooler. - Discontinue this practice. The cones can be cooked to an internal temperature of 74C, then the meat must be sliced off the cone prior to the cooling process and stored in the cooler/freezer for future use.
