   • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
     • Operator is to ensure that the mechanical dishwasher is repaired and functions as designed, dispensing an adequate concentration of chlorine based sanitizer during the sanitizer cycle. Switch to manual dishwashing in triple sink set up (Wash/Rinse/Sanitize) until the dishwasher unit is repaired.
