      • Observed staff apron left on the cutting board in the deli station. This was removed during the inspection. Discussed proper storage of staff personal items in the facility.Nonfood items are to be stored in a way to prevent contamination of food and food contact surfaces. Food contact surfaces must be maintained in a clean and sanitary condition.

      • Drain in one of the coolers appeared stocFloor areas in the storage room at the back of the building and the walk-in freezer by the meat slicers appeared dirty. Store Manager sent photos of the clean floor areas at 4:54 pm, a few hours after the inspection were completed.Produce ceilings and the dairy cooler sewer covers appeared dirty.       • Floor areas in the storage room at the back of the building and the walk-in freezer by the meat slicers appeared dirty. Store Manager sent photos of the clean floor areas at 4:54 pm, a few hours after the inspection were completed.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Temperature of the sandwich cooler in the deli section was at 11.3 C at the time of inspection. Food items in the cooler were transferred into the walk-in cooler during the inspection. Store manager in-charge mentioned that the facility technical staff will be notified for necessary repair.All walk-in coolers and freezers temperature were adequate at the time of inspection.Temperature of hot held food units were >60C at the time of inspection.

      • Observed pooled Juice on the floor of the walk-in cooler from the poultry products stored. Juice not draining properly in the walk-in cooler. Staff clean up juice on the floor during the inspection. Check drainage facility to ensure juice do not accumulate in the space and to prevent transferring of any possible microbes in the juice from the cooler into the food preparation area by staff.

      • All coolers and freezers temperature were adequate at the time of inspection. Soup and other hot held foods at the display unit were maintained above 60 C except the gravy that was observed to be at 45.8 C when probed. The gravy was removed and reheated to increase the temperature above 60 C during the inspection.Facility uses infrared thermometer to monitor temperature of foods on display.- Education was provided to staff regarding temperature control for food to prevent foodborne illness.
