      • Cockroach activity was observed in traps placed throughout the facility. Ensure pest control measures are taken to help eliminate cockroach activity in the facility.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The wooden shelf in the cabinet beneath the two-compartment sink was observed to be made of a material that is not smooth or moisture resistant. Please ensure the wooden shelf is sealed and/or painted to ensure the surface is smooth, moisture resistant and easy to clean.

      • Bleach/chlorine sanitizer was measured at 1000ppm with bleach/chlorine test strips. Ensure bleach/chlorine sanitizer is maintained at 100ppm. The operator prepared a 100ppm bleach/chlorine sanitizer during the inspection.

      • Cockroach activity was observed in the cabinet beneath the 3-compartment dishwashing sink. Ensure pest control measures are taken to help eliminate cockroach activity in the facility.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The faucet on the handwashing sink was observed to have a partial blockage that is affecting water flow. Please ensure the faucet is serviced to restore proper function.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1. A buildup of grime and/or food debris was observed beneath the commercial dishwasher. 2. A buildup of food spatter was observed on the downward facing side of the counter where the garbage can is stored. 1-2. Ensure the indicated area are cleaned and sanitized.

      • Staff were reminded how to mix 100 PPM Chlorine solution.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • -There were a couple of ceiling tiles damaged.-At least two light bulbs were burnt out.Ensure all of the ceiling tiles in the kitchen are in good condition and replace any bulbs that are burnt out.
