- 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(b) insects, rodents and other pests are controlled;
- Rodent droppings observed on the counter by the kitchen hand wash sink, on the floor at floor/wall junctions throughout the kitchen, on the floor throughout the dish washing area, on the bottom selves where the wooden boards are stored, on the bottom metal shelf in the dry storage area, and on the bottom food storage wooden shelf in the dry storage area. Shelves where rodent droppings were observed were cleaned and sanitized at time of inspection. Remaining areas affected by rodent droppings must be cleaned and sanitized.
- 33(2) The operator must ensure that all refrigeration and heat-holding equipment has a temperature measuring device that is accurate and in good repair.
- An instant read thermometer with the ability to measure hot and cold temperatures is required for verifying the internal temperatures of potentially hazardous food.

- Clean and sanitize food debris and dirt build up in corners behind preparation tables, corner by the kitchen hand sink, underneath the dishwasher, janitorial area, floors in the walk-in and underneath all equipment at the bar.
- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- Mechanical dishwasher and bar dishwasher must be professionally repaired to maintain a chlorine concentration of 100ppm. Manually wash and sanitize dishwasher and glasses until repaired.
- 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:

- Clean and disinfect areas affected by rodent droppings including the back right corner of the kitchen on the floors and bottom shelves, along perimeter of the kitchen, surrounding dishwasher, underneath shelf containing chemicals and in the janitorial room corners.
