- Observation(s): Bleach sanitizer in spray bottle too strong. Staff diluted until correct strength of ~200ppm REMINDER: Ensure wipers return to the pail of sanitizer.

- Observation(s): Refrigeration temperatures satisfactory, except during hotter weather, the condiment cooler tends to warm up from the cook-line equipment. *Highly recommend using smaller portion inserts to allow the main condiment cooler insert tray to hold ice for augmenting temperature control during hotter weather. Hot Hold Equipment: *Ensure hot-hold products are at correct reheated temperature prior to hot-hold, and maintain Hot-Hold Temperature monitoring Log *Ensure hot-hold products are regularly stirred to maintain even heat above 60°C throughout the product.
