    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: (CORRECTED DURING INSPECTION) Scoops were being stored inside dry food powder bins with the handles contacting the foods. Packaged bread was being stored on top of a container that is in contact with the mop bucket. A case of tomatoes was being stored on top (covering) of a plastic garbage bin.
      • Corrective Action: Store scoops so that foods are not exposed to the handles and bare hand contact. Store scoops in a sanitary manner (i.e., in a designated container) and clean and sanitize them frequently. Additionally, ensure food is not stored near waste disposal areas to minimize potential cross-contamination.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: (CORRECTED DURING INSPECTION) Chlorine solution in a wiping cloth bucket used for food contact surfaces was measured to be 25 ppm. Concentrations below the required levels may not achieve the necessary reduction in microbial levels, resulting in an ineffective sanitization of food contact surfaces.
      • Corrective Action: Ensure wiping cloths are stored in an adequate chlorine sanitizing solution of 100 – 200 ppm. Monitor the sanitizing solution on a regular basis with proper test strips. Sanitizing solutions should be changed every 2 hours or as needed.
    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: The back door seal on the frame was broken and an exposed gap can be seen along the floors. This may allow pests, such as flies and mice to enter the premises.
      • Corrective Action: Ensure exterior openings be protected against the entry of contaminants or pests by sealing gaps along floors.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Cardboard liners were used to absorb oil under the deep frying area. Build-up of grease and food debris were observed on the cardboard's and in the hard-to-reach places around the equipment. This allows for the attraction of pests and is also a potential fire hazard.
      • Corrective Action: Ensure cardboard liners, food debris, and grease around the deep frying area are removed. Operator stated that cardboard's will be removed and the area will be deep cleaned.
