Staff inform the filters are not regularly cleaned in addition to the professional service.
      • Corrective Action(s): Vent hood filters must be properly cleaned and sanitized every 1-2 weeks in addition to professional vent cleaning. They can be removed and run through the dishwasher. Heavy grime may need to be manually cleaned.

Sanitizer solution in spray bottle in drink making area was too strong (ie. bleaching out the test strip)
      • Corrective Action(s): Ensure sanitizer solution is maintained at 100ppm. Staff member added a capful of bleach to obtain that concentration in the container and diluted the sanitizer in the spray bottle. Use test strips on site to verify 100ppm is obtained (ie. 5ml of bleach per liter of water).

      • Observation (CORRECTED DURING INSPECTION): Noted recently cooked steaming broth on the ground in medium sized container with the lid on it.
      • Corrective Action(s): Reviewed proper cooling procedures with operator. Ensure foods are cooled from 60C to 20C within 2 hours at room temperature - do not cover, transfer to shallow prechilled pans, use ice wand/ice bath...etc. Then transfer to cooler unit to cool the foods from 20C to 4C within 4 hours.

      • Observation (CORRECTED DURING INSPECTION): None of the staff hand wash stations had paper towel (staff washroom, back kitchen area, front drink making area).
      • Corrective Action(s): Operator refilled paper towel at time of inspection. This issue was noted on the previous inspection report.

      • Observation (CORRECTED DURING INSPECTION): No paper towel available at any of the staff hand wash stations. Staff unable to be drying hands properly. Observed staff member in front drink making area handle damp wiping cloth then proceed to the back food preparation area to dispense food without washing hands.
      • Corrective Action(s): Instructed owner to refill hand wash stations and communicate to staff member on duty to wash hands after every point of contamination and before handling/dispensing food. Ensure hand wash stations are fully equipped at all times and that staff properly wash hands as needed.

      • Observation (CORRECTED DURING INSPECTION): A) Pot of hot broth was stored on the ground at time of inspection.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Front drink making area did not have any paper towel. Spray bottle in the back had 100ppm chlorine sanitizer solution but noted that staff were using reusable cloth towels.
      • Corrective Action(s): Ensure sanitizer is readily available in the front service area and that if reusable cloth towels are used to wipe food contact surfaces, that they are stored in a container of sanitizer solution to prevent microbial growth. Otherwise, use single use paper towel to wipe sanitizer on food contact surfaces.

      • Observation (CORRECTED DURING INSPECTION): None of the staff hand wash stations had paper towel at time of inspection (front drink area, kitchen food prep area, staff washroom. Operator did not have the right type of paper towel to fit in all dispenser but was able to place a roll at each hand sink. No concerns with soap, hot and cold running water (available).
      • Corrective Action(s): Immediately obtain proper paper towel and place in holder/dispenser at each hand sink.

      • Observation (CORRECTED DURING INSPECTION): Noted bag of onions on the ground and several foods in the walk in cooler uncovered. Also noted staff washroom door opens into the food preparation area and is not self closing.
      • Corrective Action(s): Keep all foods stored off the ground and all stored foods covered. Also, install self closing hinges/device on staff washroom door.

      • Observation: Back door was open at time of inspection.
      • Corrective Action(s): Keep back door to premises closed or obtain/install a screen to prevent the entry of pests.

      • Observation: Noted a food prep sink installed beside the cookline. No concerns with this addition or location, however no floor plans were submitted. Also noted missing ceiling tiles above the back door and walk in cooler.
      • Corrective Action(s): Submit updated floor plans and obtain permits from the building/plumbing department at the City of Burnaby. Also, replace missing ceiling tile.
