    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • -There were rags in the butcher rooms that were sitting on the counters. Rags must be immersed in sanitizer solution to prevent growth of germs.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • -Handwash sink did not have soap and paper towel next to it. Soap and paper towel in dispeners is to be made available next to handwash sink to encourage proper handwashing.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • -There were small flies, many dead on the floor underneath equipment. This must be cleaned to prevent contamination of food.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Area was cluttered and poorly organized. ACTION REQUIRED: conduct a deep, thorough clean of the area. Discard/remove any items/supplies that are no longer needed. Organize stock.
