- Chlorine sanitizer solution was not available, staff did not know about approved sanitizing methods, and test strips were not present.Correction:- Educated staff on how to make right concentration of chlorine sanitizer solution.- Measured the chlorine sanitizer solution to be at 200 ppm.- Educated staff to store cleaning cloth in the chlorine sanitizer solution bucket

- Improper manual dish washing procedures were observed.Two compartment sinks did not have any drain plug to store bleach sanitizer solution needed to sanitize kitchen utensils correctly.Staff were unable to describe the approved 2-compartment sink dishwashing requirements.Ensure that staff are trained in proper dishwashing procedures and ensure that drain plugs for the sink are available to allow for the filling of the dishwashing sinks.

- Weather stripping was either damaged or required adjustment at the following locations:-Loading bay man-door-Loading bay truck door-Adjoining building exterior door (deli area)Ensure that these areas are weather proof and are protected against the entry of pests.No pest activity was noted at the time of the inspection.

- Work to the tile flooring in the food storage area adjoining the food handling space has not been completed. The surfacing under the tiles is non-absorbent.Ensure that the tile surfacing is completed and that the floors are smooth, easily cleanable and non-absorbent.

- A few ceiling tiles and light covers in the food handling area and food storage area of the facility were noted to have water marks on them.Ensure that the marked materials are cleaned/replaced as needed so that the areas can be monitored for further water infiltration. If water infiltration is noted to be ongoing, the source of the leak should be located and sealed to prevent any future damage.
