    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The temperature of the taller upright refrigerator in the kitchen was measured at 5.2 degrees C. The temperature of the middle display refrigerator in the hall outside the kitchen was measured at 5.9 degrees C. Please adjust/repair the refrigeration units to ensure they maintain a temperature of 4 degrees C or less.

      • A measuring cup was sitting on top of the sugar in the bulk sugar container. The operator removed the cup from the sugar. Please ensure scoops/utensils are not stored in direct contact with food.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Test strips were not available for testing the concentration of mixed sanitizing solutions.
