      • Observation(s): Overall yes, however a few items to address: 1. The fans above the grill prep area have dust accumulation. Dust particles can create potential for cross contamination. -Ensure to remove dust, clean and monitor on a regular basis. 2. Handel on the prep cooler against wall is missing. -Ensure handle is replaced.

      • Observation(s): New wooded wall (potato peeler attached) is not permitted. Must be painted or covered entirely with material that is smooth, non absorbent and easily cleanable, to prevent the potential of cross contamination.
      • F2.6B All food contact surfaces must be constructed from materials that are suited for their intended purpose, durable and free from any noxious (harmful) or toxic substance.

Food must not be stored in non food grade containers, bags etc, as preservative chemicals in these containers can leach into the food creating cross contamination. - All food items must be stored in food grade containers or in the original inserts in the prep cooler.
