      • Drain fly's pest problem was not noted on the pest report. Pest company was not treating for drain flies. Increase cleaning at the kitchen and bar and request pest company treatment for drain flies.Drain flies were observed in the kitchen and bar. Black flies were observed in the kitchen. Fly strips were covered with black flies. Food, stains, grease and water in the kitchen that allow flies to thrive.Detail cleaning required in both kitchen and bar.Remove Drain and black flies Previous Inspection:A significant amount of fruit flies were noted between the supply closet and dishwashing area.Implement additional pest control measures such as the installation fly light or fly tape to control and eliminate the presence of files. As well as increased sanitation in these areas.

      • REPEAT VIOLATION:The door handle of the coca cola cooler is in disrepair. A cardboard handle has been fixed to the door.Repair or replace the cooler door handle. The handling must be smooth, non-porous, and easily cleanable.

      • Ice build-up on the walk-in freezer condenser unit and grime build-up on the door and floor. Fix the walk-in freezer condenser

      • There was grime and food debris accumulated on the floors in the front service line.Thoroughly clean these floors.

      • Sanitation issues were observed at the following locations:1) Cobweb and debris build-up between the ice machine and wall.2) Debris build-up underneath the bar and drink syrup on the bar service area.3) Food stains and grease build-up on kitchen walls.Clean both kitchen and bar. A detail cleaning of the bar and kitchen will help reduce the population of the drain and black flies.

      • Fly strips were covered with black flies were hung above the food handling area. Remove the fly strips and do not hang any fly strips above food handling area or clean dishes.

      • 1) Pizza boxes were stored on the floor. Store food items at least 6 inches off the floor.2) Clothes and bag were stored at the service counter.Provide a separate space for storage of personal items.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) Pre-portioned sliced beef was stored above the cooler insert load limit. Beef was measured between 5.8 (bottom) to 16.0 (top) degrees C. Discarded the top bags of sliced beef. 2) Containers of frozen fries and yams were left out at 2:30pm. Surface temperature of the fries and yams were measured at 24 degrees C. Store perishable foods at 4 degrees C or below or at 60 degrees C or higher.

      • 1) No high temperature waterproof thermometer was available to check the dishwasher. Provide thermometer.2) Dishwasher and quat sanitizer were not checked daily.Check dishwasher and quat sanitizer daily.

Resurface or replace the cutting boards.

A detail cleaning of the bar and kitchen will help reduce the popluation of the drain and black flies.
