      • Observation (CORRECTED DURING INSPECTION): Foods in the walk-in freezer were stored on the floor.
      • Corrective Action(s): Ensure foods are stored off the ground and protected from potential contamination. Food items were placed on the shelving units at the time of inspection.

      • Observation (CORRECTED DURING INSPECTION): Quats sanitizer pails were approximately 50ppm.
      • Corrective Action(s): Quats sanitizer must be maintained at 200ppm to properly sanitize food contact surfaces. Dispenser was tested at 200ppm. Ensure sanitizer is flowing prior to filling the sanitizer pails. Both pails were refilled with 200ppm sanitizer.

      • Observation (CORRECTED DURING INSPECTION): Handwash station does not have hot water. Hot water was measured at 13C. Service has been contacted and Vice Principle stated work is to begin next week.
      • Corrective Action(s): Handwash stations must be supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. While hot water is being serviced, food handler may use single use gloves. Staff must monitor food handlers, and gloves must be changed when they become contaminated (for example, between handling raw and ready-to-eat foods, handling dirty equipment, touching garbage containers, using personal phones, entering the kitchen, etc).

      • Observation: Rodent droppings were observed in the washer/dryer area. Pest issues have improved. Instructors stated they are still observing rodents and droppings in the school.
      • Corrective Action(s): Continue to employ pest control services and control measures to mitigate infestation. Clean and sanitize all work surfaces prior to working each day and clean and sanitize all affected areas.

      • Corrective Action(s): While the dispenser is being serviced, use the manual Quats sanitizer at the 3-compartment sink to prepare 200ppm Quats sanitizer. Quats sanitizer at 200ppm was prepared at the time of inspection and sanitizer pails and spray bottles were filled with 200ppm Quats sanitizer solution.

      • Corrective Action(s): Once canned foods are opened, ensure the contents are transferred to a food grade container with proper protection to prevent potential contamination of foods. Sauce was discarded at the time of inspection.

Clean and sanitize all areas affected by rodent droppings and continue to monitor pest activity. To prevent pest infestation, ensure the following area carried out: seal potential entry points for rodents, store foods in pest resistant containers, remove garbage/organics on a regular basis, maintain the kitchen in a clean and sanitary condition and remove standing water.

      • Corrective Action(s): Service dishwasher to ensure it is functioning properly. Facility prepared 200ppm Quats sanitizer in the 3-compartment sink at the time of inspection to facilitate manual warewashing. Test strips available on-site to verify chemical concentration.

Students washed their hands at the time of inspection. Review with all students proper hand hygiene and handwashing practices.

      • Observation: Rodent droppings were observed in a corner below the storage rack in the dishwashing area and in two corners behind the laundry machines. Note: The floor and surfaces of the rest of the food premises were in a clean condition and free of droppings. Chef instructor has stated that they have been using bleach to sanitize the peripheral areas each day.
      • Corrective Action(s): Bleach water was poured over the aforementioned areas during the inspection, please wipe these surfaces after the 20 minute contact time with bleach water to remove the droppings. Continue to monitor for signs of recent pest activity and continue with the measures of the integrated pest control program (pest control program, covering food equipment/preparation utensils from contamination, regular cleaning to prevent breeding grounds for pests, and keeping the food premises protected from the entrance of pests).

      • Observation: A small amount of rodent droppings were observed in the following areas at the time of inspection:
      • -Floor near the door and shelving unit in the dishwashing area
      • -Floor below the dishwasher
      • -Floor behind the laundry machine on the right hand side
      • -Floor behind the cabinet with the small dough mixer.
      • Chef instructor mentioned that they are cleaning the periphery with bleach water every second day and would increase this frequency to daily.
      • Corrective Action(s): Clean the affected non-food contact areas with bleach water (1 part bleach with 9 parts water) for at least 20 minutes and remove the rodent droppings; Clean today. Continue to monitor for signs of recent pest activity and clean and sanitize all affected areas immediately. Continue with the integrated pest control measures discussed.

      • Observation (CORRECTED DURING INSPECTION): Two holes were observed in the wall near the mop sink/laundry machines. One of the holes was shallow and the other hole in the wall was deeper, which may be an entry/harbourage point for the rodents.
      • Corrective Action(s): Seal the holes permanently (e.g. with metal screens) to prevent a harbourage/entry point for rodents; Correct within 1 month. Chef instructor added steel wool into the holes as a temporary measure to seal them.

      • Observation (CORRECTED DURING INSPECTION): It was observed that food contact surfaces washed and sanitized through the dishwasher were being dried with a cloth towel. *Repeat Issue*
      • Corrective Action(s): Ensure all food equipment, preparation utensils, storage containers, and other food contact surfaces are air dried after they are washed and sanitized through the dishwasher. Please communicate this with students involved in the warewashing procedures each semester. Recommended: Post signage indicating that food contact surfaces should not be towel dried upon dishwashing.

      • 3. Floor behind a white dry storage bin
      • 4. Floor along the peripheral area near the ice machine
      • 5. Hard-to-reach floor area behind the cooler near the entrance door and sliding gate.

      • Corrective Action(s): Ensure the following corrective action is undertaken:
      • 1. Clean all of the affected areas with bleach water to remove the rodent droppings today. Monitor for signs of recent pest activity each day of operation and clean affected areas to remove the droppings immediately.
      • 2. Protect all food equipment/utensils/containers/cutting boards from contamination by keeping them covered in pest-proof enclosed areas (e.g. cabinets) or food grade containers with tight fitting lids at least 6 inches off the floor.
      • 3. Ensure all prep. surfaces are sanitized prior to use and after each use.
      • 4. Continue with the pest control program on at least a monthly basis and sealing any potential entry points to prevent rodents/mice from entering the food premises.

      • Observation (CORRECTED DURING INSPECTION): Dishwasher final rinse temperature was below 71 degrees C internally the plate consistently at the time of inspection. As such, all food contact surfaces placed through the dishwasher had not been properly sanitized.
      • Corrective Action(s): Chef Instructor set up 200 ppm QUATS in the third compartment sink to manually re-sanitize all food contact surfaces. Ensure all food contact surfaces/food equipment/utensils are washed, rinsed, sanitized, and air dried.

      • Observation: Rodent droppings were observed in the corner behind the laundry machine, the corner near the door leading into the dishwashing area, and the floor near the dry storage bins (adjacent to the dishwashing area).
      • Corrective Action(s): 1. Clean up affected areas with bleach water to remove the rodent droppings today. Monitor for signs of recent pest activity and clean up immediately to remove all droppings.
      • 2. Cover all food equipment/utensils to ensure they are protected against contamination from pests. Sanitize all prep. surfaces prior to use. Discard any contaminated food and/or takeout containers.
      • 3. Contact a pest control company and have them provide pest control services. Correct within 1 week. Provide a copy of their invoice/pest control report to the Public Health Inspector of Fraser Health.
      • 4. Seal entry points (holes/gaps) to prevent rodents from entering the school cafeteria.

      • Observation: Dishwasher final rinse temperature was below 71 degrees C at the plate consistently.
      • Corrective Action(s): Ensure the dishwasher is able to maintain a final rinse temperature of at least 71 degrees C internally at the plate; Correct within 2 business days to prevent any enforcement action. In the meanwhile, wash the food contact surfaces through the dishwasher and then immerse them into 200 ppm QUATS sanitizer for at least 30 seconds, and allow them to air dry.
