- Observation(s): Bottom left side of prep cooler and items stored above were measured at ~10°C. This is one unit however circulation may be compromised by how it is loaded. Corrective Action: Distribute the items in the cooler to allow for adequate circulation of air within and monitor the temperature to ensure it drops to ≤4°C in all parts of the unit. If temperature cannot be achieved, items must be moved to an area of the cooler that can maintain ≤4°C.

- Observation(s): Operator reports that burgers are being prepared in their home kitchen. Corrective Action: All food products served from the food truck must be prepared, cooked, and served from the unit. Discontinue preparing burgers in the home kitchen and ensure everything is exclusively prepared in the food truck.
