- A couple of the coolers and freezers did not have separate thermometers inside to verify temperatures. Purchase separate thermometers for each of the coolers and freezers. Do not use the internal ones that display on the outside as these are usually not accurate.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- Operator did not have chlorine test strips to test the surface sanitizer or the dishwashing sanitizer concentrations. Purchase chlorine test strips and ensure that surface sanitizer and dishwashing sanitizer are maintained at 100-200 ppm chlorine.
