      • The maximum temperature measured inside the high temperature dishwasher after 4 wash cycles was 65C. The dishwasher was not adequately sanitizing utensils. The dishwasher is required to achieve a sanitizing temperature of at 71C at dish level or 82C on the manifold.The facility has a three-compartment sink for manual dishwashing. The operator was directed to manually clean and sanitize dishes using the three-compartment sink or use the dishwasher for washing and manually sanitize the dishes in the sink using a 100ppm chlorine solution.The operator requested two weeks to have someone repair the dishwasher.ACTION REQUIRED:1) Repair the dishwasher to ensure that it is capable of achieving a sanitizing temperature of at least 71C at dishlevel or 82C on the manifold.
