I OBSERVED THREE BOTTLES HOOKED INTO THE MACHINE: 1 RINSE AID AND 2 DETERGENTS (NO SANITIZER WAS OBSERVED HOOKED INTO THE MACHINE). INSTRUCTED THAT CHEMICAL DISH MACHINES MUST BE PROPERLY INSTALLED AND PROVIDE 50-100 PPM OF CHLORINE DURING THE FINAL RINSE. THE MANAGER ON SITE PROVIDED A CONTAINER OF CHLORINE SANITIZER AND HOOKED IT UP TO THE PROPER MACHINE LINE. THE MACHINE WAS THEN OBSERVED WITH TEST STRIPS TO BE PROVIDING 100 PPM OF CHLORINE DURING THE FINAL RINSE. CRITICAL VIOLATION: 7-38-030
