- 19(1)(a) A food establishment must be located, designed, constructed and maintained to ensure all of the following:
(a) that the risk of contaminating the food is minimized;
- During the inspection the high temperature dishwasher did not reach 82*C at the gauge during the rinse cycle. Staff were instructed to manual sanitize dishes in the 3-comparmtent sink. Dishwasher is now sanitizing properly.
