      • Scoops were stored in rice and flour container with the handles touching the food. The operator removed the scoops to prevent contamination.

      • The ice scoop was in the ice in the ice machine. The operator removed the scoop to mitigate the risk of cross contamination.

      • The prep cooler located beside the cook line, had uncovered food containers. The top of the prep cooler had open food containers stacked on top of each other. Please ensure that the food is covered during storage and that open food containers are not stacked on top of each other to prevent cross contamination.

      • Ventilation canopy filters had significant build up of grease. Excessive grease build up can make it difficult for the ventilation canopy to remove grease, moisture and odors from cooking. The operator reported that the vents will be serviced on June 5th.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Sanitizing solution in cloth bucket was 0ppm QUATS upon inspection. Operator mixed solution during inspection to 200ppm QUATS. Use of bleach water for sanitizing was also discussed - inspector will send information on mixing a bleach water sanitizing solution.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Mouse feces noted behind 2 chest freezers. Mouse traps are present in the facility and checked regularly. It was also noted that the back door had a gap allowing for possible pest entry. Please clean up mouse feces, set traps behind the freezers (snap type traps are acceptable) and repair gap in back door.
