      • Grey bus-bins used for wet breading of deep-fried foods were found with dried up breading indicating they were not properly washed and sanitized between uses.Cardboard used on flat surfaces and was dirty indicating it is not changed often enough. Cardboard is not smooth non absorbent and easily to clean material.

      • Cutting boards surfaces were soft and requires resurfacing.the outside of several storage bins was dirty.

      • Corners, under and behind equipment and shelving, edges along walls and floor meet, light switches, area under the sinks and grease trap, walls and ceiling above dishwasher had various degrees of buildup of grime and dirt/food particles.Doors and trim had buildup of grime on hi-touch areas.

      • There was prepared food, waiting to be deep-fried, sitting at room temperature. The surface temperature of the food measured ~20°C.Operators moved food into the walk-in cooler and were instructed to take it out when it was ready to be cooked.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The handwashing station in the kitchen was obstructed by a cooler. Operator stated that the cooler was about to be moved and used in a different area of the kitchen.Please ensure that all handwashing stations are accessible at all times. There was toilet paper in place of paper towels at the handwashing station. Please ensure that handwashing stations are stocked with adequate supplies.

      • There were multiple metal tins opened with food in the cooler. Once opened, a metal tin is not appropriate for storage and contents must be transferred to food grade containers.

      • The paper towel dispenser at the front of house hand sink was empty and restocked during inspection. Ensure all hand washing stations are fully stocked at all times.

      • The oven/grill/deep fryers have grease and food debris accumulated and require cleaning.The lid of one deep freezer is broken, and there is significant ice build-up. This freezer needs to be defrosted and repaired within 2 months.

      • There is significant grease, grime, and food debris accumulated in hard-to-reach areas including under the cook top, under deep fryers, under shelving units, and in corners. A deep clean is required in the kitchen and under the shelves in the walk-in cooler. The staff washroom is dirty and requires cleaning. The pallet being used to hold sauces must be replaced as there is grease accumulated and the wood cannot be cleaned.
