    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Chlorine test strips have been obtained, and the dishwasher has been repaired, showing no leakage.However, when tested, the chlorine sanitizer concentration exceeded 200ppm - too high. Please ensure the pre-mixed sanitizer bucket is diluted or replaced with a sanitizer pre-mixed to provide a 100ppm chlorine/bleach solution. In the meantime, the operator has been advised to given dishes ran through a final rinse with potable water upon after running them through the dishwasher.

    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Operator is getting test strips tomorrow to verify the strength of the sanitizer. He is also going to change the sanitizer bottle as it is old and not at an adequate strength. Please send me a picture as discussed demonstrating the machine is working as intended. CORRECTEDDishwasher was verified to be working however it is leaking. The leak needs to be repaired.

      • Food must be covered while in storage. Raw foods must be stored beneath ready to eat and/or cooked foods. Please remove utensils from items while in storage.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Operator is getting test strips tomorrow to verify the strength of the sanitizer. He is also going to change the sanitizer bottle as it is old and not at an adequate strength. Please send me a picture as discussed demonstrating the machine is working as intended. OUTSTANDING

      • Advised soap should arrive with the order tomorrow. This must be in place prior to any food handling. Please send a picture. CORRECTEDPAPER TOWEL IS REQUIRED IN THE PAPER TOWEL DISPENSER AT THE HANDWASH STATION.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Housekeeping was poor at the time of inspection. A pile or what appeared to be unclean wet rags were observed near the handwash sink, the garage containers were without bags in them and were dirty with food spills,
