- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- The mechanical dishwasher was displaying a message that stated "WATER LEVEL ERR". This dishwasher did not achieve the sanitizing temperature during the rinse cycle. The facility will switch to manual dishwashing until the dishwasher is repaired.
