      • Observation (CORRECTED DURING INSPECTION): Sandwich cooler (under chef oven) measured 11C (air temperature and food temperature).
      • Corrective Action(s): Please remove all food items from this cooler and do not use this cooler until it has been serviced and maintaining 4C or colder.
      • Violation Score: 5
      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Quats sanitizer dispenser at 2 compartment sink measured less than 200ppm quats. Concentrate dispensing hose was pinched from solution bottle - some solution was dispensing, but not in adequate quantity
      • Corrective Action(s): Ensure that chemical dispensers are in good working condition, and are dispensing proper proportions of sanitizer after bottles are changed. Obtain test strips to ensure that solution measures 200ppm when dispensed.
      • Violation Score: 5
    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Under counter cooler not maintaining less than 4C.
      • Corrective Action(s): Please have cooler serviced or repaired to maintain 4C or colder.

  5. Routine Inspection

    2 infractions

    • 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Internal temperature of milk in under counter cooler registered at 7C and 9C, ambient air temperature of cooler registered at 7C. Potentially hazardous food stored above 4C can cause bacteria to grow more rapidly, leading to spoilage and foodborne related illnesses.
      • Corrective Action(s): Move all potentially hazardous foods to a working cooler. Adjust temperature setting on the cooler such that it can maintain 4C or lower. Monitor temperature of cooler. Service or repair unit if required.
      • Violation Score: 5
      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): 0ppm QUAT registered in sanitizer bottle and bucket. Additionally 0ppm QUAT registered at chemical dispnser. Without adequate sanitation, disease causing pathogens can grow on food contact surfaces and contaminate food products.
      • Corrective Action(s): In the interim use bleach as sanitizer, mix 1/2 teaspoon of unscented bleach with 1 litre water. Service Chemical dispenser such that it dispenses 200ppm QUAT solution. Use test strips to verify QUAT concentrations
      • Violation Score: 5
    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: 1) Chemical dispenser at 2 compartment sink dispensed 0ppm QUAT solution.
      • 2)Under counter cooler containing milk not maintaining 4C or below
      • Corrective Action(s): 1) Service or repair dispenser such that 200ppm QUAT solution is dispensed. Use test strips to verify sanitizer concentration
      • 2) Adjust temperature setting such that cooler maintains temperature of 4C or below. Service or repair unit if temperature adjustment does not work
      • Date To Be Corrected By: 1 week
      • Violation Score: 3
