      • Corrective Action(s): As discussed, ensure to notify district EHO if you are removing equipment prior to doing so.

      • Observation: Both fumehood ventilation units have buildup of debris/dust . Fumehoods are overdue for servicing
      • Corrective Action(s): Have fumehood serviced asap. If you cannot arrange to have them serviced, your staff will need to manuall clean the ventilation themselves.

      • Observation: Dead mouse found underneath the shelving rack in the dry storage room.
      • Corrective Action(s): Discard the dead mouse using appropriate PPE and use sanitizer to clean up the area.

      • Observation (CORRECTED DURING INSPECTION): AGAIN observed potentially hazardous foods stored above the insert fill-line in the preparation coolers -of note cut strawberries, pasta noodles. The sliced strawberries at 11 deg C, pasta noodles at 6 deg C -operator indicates they were placed less than hour ago.
      • NOTE: the slats are missing for holding the inserts at the correct levels -a few were found but some still needed
      • NOTE: this was also cited in the August 30, 2022 routine inspection -continued infractions will require increased enforcement such as ticketing
      • Corrective Action(s): Moved the foods below in the preparation cooler
      • Replace the slats in the preparation coolers for the inserts so workers can prepare and assemble the foods as necessary.
      • Violation Score: 5
    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Newspapers were observed in metal trays and a whole stack in a trolley as well.
      • Operator indicates ithey are used for wiping floor spills??
      • Corrective Action(s): Do not use newspapers for shelf/container liners -use paper towels for soaking up grease
      • Do not use newspapers for soaking up floor spills -that is what your mop and degreasers are for.

      • Observation (CORRECTED DURING INSPECTION): A few potentially hazardous foods stored above the fill-line in the preparation coolers. Operator indicates it was placed there less than an hour ago
      • Corrective Action(s): Do not exceed the fill-lines in preparation coolers insert level -place food below the vents as shown
      • Operator placed the foods in the below fridge drawers
      • Violation Score: 5

      • Observation (CORRECTED DURING INSPECTION): Raw meat stored above ready-to-eat foods: tofu, salad in the Walk-in cooler
      • Corrective Action(s): Store all raw meats/seafoods/eggs below ready-to-eat foods in case of leakage
      • Violation Score: 3
      • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Some raw wooden shelves observed in Walk-in cooler -starting to mold over
      • Corrective Action(s): Clean and sanitize the raw wooden shelves -paint or stain the wood to seal it in high humid areas such as the fridge
