- Scoops are stored in bulk products. Ensure scoops are stored in a manner where the handles cannot fall into the bulk product.
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- - Wash cycles all above 60C. Observed rinse cycle on dishes 82C once but not consitsantly after a few cycles. Two waterproof thermometers were used to verify final rinse cycle temperatures on plates by putting though the dishwasher a few times and it was measured at 71C, 72C, and 73C, 74C on plates. Kitchen manager, Shibin had let me know that they are aware of this issue a couple days ago and had reached out to the commercial high-temp dishwasher company. They are ordering some parts and will inform PHI once it has arrived and installed. In the meantime, put a small amount of bleach (half a cap to a cap in the water wells when washing dishes) until parts have arrived and it is working properly again. Or use three-compartment-sink manual ware washing method with at least 100 ppm chlorine sanitizer at third compartment sink. Soak washed and rinsed dishwares in 100 ppm chlorine sanitizer at least 2 minutes then air dry afterwards. - Observed August 4, 2023 dishwasher monitoring sheet. Wash cycle all above 60C. Rinse cycle on dial was 70 C, 72C, 82C.
