      • Operator to turn glassware upside-down to protect interior of glassware from sources of contamination.

      • Dishwasher sanitizer concentration not logged daily.
      • Operator sanitizer monitoring to log sheets. Monitor sanitizer bottle.

      • Dishwasher sanitizer was low and not dispensing required. Sanitizes as per cleaning plan.
      • Operator to ensure sanitizer jug is replaced frequently so that 500ppm is provided at all times. Corrective action was taken (premises was not open to public at the time of inspection). Comments Fridges keep food below 4°C. Temperatures are monitored and recorded daily. Liquid soap water and paper towels are provided at handsinks. Test strips are provided. Food are dated, covered and stored correctly.
