- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Bleach spray is used in the kitchen for surface sanitation. At the time of inspection, the concentration was too high (solution bleached the colour from the test strip). The solution was diluted at the time of inspection. Test strips are available for concession workers and are stored under the sink. To prevent this from occurring again, PHI suggested writing down the proper bleach: water ration on the bottle for staff to reference.
