- The bleach sanitizer made in the three-compartment sink was measured at 50 ppm. - More bleach was added, and the sanitizer strength was measured at 100 ppm. The operator was made aware to use 1/2 teaspoon of bleach per 1 liter of water.
- 09. Are chemicals stored and handled in a safe manner?
- The sanitizer bottle was not labeled.- Ensure that any bottle used for chemicals have been labeled. The operator labelled the bottle during the inspection.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- No pest control record is being kept. - A pest control checklist sent via email. Please ensure to maintain pest control records on a monthly basis.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- 1) The lights in the food prep area did not have covers.- Ensure that lights have shatter proof covering or replace with shatter proof led lights. 2) Tape was observed on ceiling tiles over the prep counters in the kitchen area. - Remove the tape, so that the ceiling is smooth, easily cleanable and non-absorbent to moisture.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- 1) The divider bar in both compartments of the prep cooler has rust.-Replace the divider bar on both the prep cooler compartment. 2) The pizza oven was observed to have food debris build up. - Please ensure to clean the pizza oven. 3) Microwave was visibly dirty. - Replace the microwave. 4) Cutting board was observed to be worn off. - Please replace the cutting board so that it is smooth, easily cleanable, and non-absorbent.5) The mixers in the back near the freezer were observed to be dirty. - Please ensure cleaning of the equipment. 6) The freezer edges were visibly dirty.- Please ensure cleaning of the freezer.7) The edges of the pizza hot holding unit had food debris build up.- Please ensure cleaning of the pizza hot holding unit.8) Pizza trays had food debris buildup. - Please ensure to clean the pizza trays.
