- Dishwasher is not measuring a chlorine residual. Please service the dishwasher and ensure a chlorine residual of 100ppm. Facility will wash dishes in dishwasher and sanitize in 2 compartment sink until dishwasher can be repaired

- Test strips for quat and chlorine sanitizers were not available in the facility.Provide test strips and monitor sanitizer concentrations daily. Ensure to use chlorine sanitizer at 100 ppm and quat sanitizer at 200 ppm.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- Caulking at the backsplash between the hand sink and dishwasher was damaged with accumulating debris. Replace caulking.There was a hole in the wall adjacent to the dishwashing area.Repair the wall to a smooth and washable finish to prevent pest access to the facility.
