      • Observation (CORRECTED DURING INSPECTION): Dipping sauces that require refrigeration are stored in the beverage cooler again, with air temperature at 6C at the start of inspection. Temperature dropped down to only 4.5C.
      • Corrective Action(s): Move dipping sauces into the pizza prep cooler immediately. Beverage cooler must be serviced to maintain an air temperature of 4C or colder AT ALL TIMES if sauces are to be kept in here.

      • There is only 1 staff member making pizza at any given time. Staff use the handsink across from warewashing to wash hands before making pizza down the line.
      • Corrective Action(s): Repair soap dispensers. ALL handsinks must be supplied at all times.
      • If unable to repair the dispeners, replace with a pump-style soap.

      • Observation: Cleaning is required for the 2 vent covers that are on the left side of the vent hood above the pizza oven.
      • Food debris noted under the pizza cooler and prep tables.
      • Corrective Action(s): Remove covers and clean and sanitize. General sanitation must be maintained throughout the day when there is down time. Do not leave until the end of the day.
      • Date to be corrected by: 1 week - December 13, 2024.

      • Observation: 2 handsinks are not in good working order: one handsink next to the broiler is leaking from the faucet and drain pipe, one handsink by the front counter does not fully shut off - causing staff to shut off the hot water line from below the sink.
      • Corrective Action(s): Repair both sinks so that they are in good working order to facilitate proper handwashing. The hot water line must be ON at all times.

      • Observation: The front upright freezer handle has been repaired with cardboard and tape.
      • Corrective Action(s): Cardboard is not a smooth and easy to clean material that is impervious to moisture. It cannot be sanitized to prevent the growth of pathogens that can cross contaminate food. Repair the handle to ensure it is smooth and easy to clean. Date to be corrected by: July 10, 2023

      • Observation (CORRECTED DURING INSPECTION): The handwashing sink near the boiler was blocked with a dough container. The adjacent prep sink has been covered with a steel plate and the water has been turned off. Staff informed that they are not using the sink and the hand washing sink is used to prep dough.
      • Corrective Action(s): The approval for the kitchen is based on the use of hand washing, preparation, and dishwashing sinks. Do not decommission sinks without approval of the health inspector. The handwashing sink was cleared at the time of inspection. The prep sink must be functional for safe operation of the facility. Date to be corrected by: June 1, 2023. Inspector will return to follow up.

      • Observation: The handle of the stand up freezer by the fryers is broken. The insulation is exposed and comes in contact with the handler when opening/closing the freezer.
      • Corrective Action(s): All materials and surfaces must be smooth and easy to clean. Repair or replace the handle of the freezer to ensure adequate sanitation. The exposed insulation at the handle cannot be cleaned or sanitized adequately to prevent the growth of pathogens.
